• Secretly Healthily’s Alternative, Cloud Bread

    Light, fluffy and easy to make, this is the perfect bread alternative.

    Cloud bread has got to best the best recipe ever made… I mean it fixes my whole issue of not eating wheat, therefore bread. Its great, its a high protein, super low in calories, dairy and gluten free alternative to bread. And can be used in all the same ways, sandwiches, toast, paninis, you name it, you can do it.So what is cloud bread? Cloud bread made by separating the eggs, whipping the whites with vinegar or cream of tartar, stirring in with the yolks, adding some seasoning, placing spoonfuls of a baking tray, smoothing out and baking at 150 Celsius for 20 minutes. That may sound like a lot of work but it isn’t and is definitely worth it.

    This recipe makes about 16 “cloud breads” and I usually serve two per person so you’ll have about 8 servings (that is if you don’t eat them all).

    One thing I can promise, it that you won’t be hearing the last of cloud bread, there will certainly be more recipes involving cloud bread! Enjoy, Amy.

    Ingredients

    • 3 Eggs, Separated
    • 1 tsp Apple Cider Vinegar
    • 1/4 tsp Sea Salt
    • 1/4 tsp Freshly Ground Black Pepper

    Directions

    1. Preheat oven to 150 Celsius.
    2. Prepare a baking tray and spray with olive oil.
    3. Beat the egg whites and the vinegar, until stiff peaks form.
    4. In a separate bowl whisk the yolks together, add in half the egg whites and fold in gently. When folding, be as gentle as you can so you take out too much of the air.
    5. Fold in the rest of the egg whites and season with salt and pepper.
    6. Place spoon fulls of the mixture and flatten down with the back of the spoon, to be under 1 cm thick.
    7. Bake in the oven for 20 mins or until golden.
    8. Remove from the oven and let cool fully.
    9. To remove from the tray, slide a thin spatula beneath each “cloud”, lift from the tray and enjoy.
    10. Store in an airtight tub with kitchen roll in the fridge.
